At our house, Detroit style pizza rules the day: Sicilian style made in small rectangular pans so all pieces are edge pieces. Then, pile the cheese all the way to the edges, so the cheese caramelizes along the edge. Our favorite is Buddy’s. I make my own based off this recipe, baked in Lloyd Pans (a preheated cast-iron pan works in a pinch).
